Ok, I admit it, I cheated today. Used a frozen Trader Joe's special: bacon-wrapped mahi mahi filets. But the mango salsa was homemade! This was a hubby favorite, definitely. Next time I'll try it from scratch--but without the corn starch, corn oil, and butter.

Didn't have all the ingredients to the various recipes I found online, so I improvised: roast pork tenderloin topped with a balsamic dijon apricot sauce (which caramelized nicely) and mushrooms with seared asparagus. The result? I'm STUFFED. Hubby is happy. Success! Also, I desperately need to get a meat thermometer.

K and I checked out the new Max Brenner chocolate-themed restaurant on Boylston in Boston today. OMG. The minute you walk in the door all you smell is chocolate. The decor is fantastic (dark brown leather and jars of chocolate everywhere) and the menu to drool for.

Hubby is taking over dinner-making duties on Mondays, as I only have a 45 minute window between rehearsal and my evening class (German diction) which goes til (ugh) 9pm. We picked out a recipe together over the weekend and he bought all the ingredients and had it going nicely by the time I got home. Mmmmm, it was soooo delicious. The perfect recipe for a cool fall evening.

I felt like one of the SATC girls yesterday, lunching at Vlora's in Boston with two girlfriends, S & J. It was a late lunch, and I had eaten not too long ago, so I wanted something light. Delicious! (I cut down on the cayenne pepper and didn't use the sherry, because I didn't want to spend $10.99 on the tiny bottle of sherry in the liquor store across the street. I also eliminated the fried bean threads and used angel hair rice pasta instead.) You can find Emeril's recipe here.

I may have found a solution to my paint color woes. Here's how it came about: When I teach voice lessons, hubby is usually home, doing work on his computer in the kitchen. My sister recommended this recipe when I visited last weekend, and I just HAD to try it right away. Can you believe this incredibly healthy chocolate mousse has avocado, soy sauce, maple syrup, and balsamic vinegar in it? Fascinating! Note: I found it WAAAAAAYYY too chocolate-y on the first try. Delicious! But crrrrrazy spicy. (Yeah, I admit I'm a bit of a spicy-ness wimp, but even my macho hubby found it spicy. Next time I'll use half the chili oil the recipe calls for. (This time around I added 1 lime, juiced, which gave a lovely cooling/acidic affect. Instead of egg noodles I used rice.) I'll definitely be making this again - a great summer meal!
